Is it possible to attach multiple cameras on a UAV platform at slightly different angles to reduce side overlap in the flight plan? I would like to test this with a few go pro cameras. Any thoughts or comments?
I think it will substantially increase your processing time. Why don’t you invest in a larger sensor camera with best shoot capabilities (raw photos and lower time-lapse between the overllaping photos)? Go pros are not recommended for serious photogrammetry. I suggest sony alpha series or even the lighter sony rx100 III or IV, they have larger CMOS sensors and professional photos capabilities with more than 20MP.

I to agree strongly.
Lens physics, sensor design and behind sensor image processing will produce high fidelity data for post processing.
However your project requirements will drive your systems design.
