Does orthomosaic contain EXACTLY the same altitude information as the DSM?
If not, How I could show the DSM like a orto-picture (instead of one B/W image)?

The orthomosaic (true orthophoto) generation is based on orthorectification . This method removes the perspective distortions from the images using the DSM. However, the resulting GeoTIFF will not contain the DSM values.
The DSM GeoTIFF raster (found in …\project_name\3_dsm_ortho\1_dsm) will contain only the surface elevation values. You can open it with most GIS software (ArcGIS, QGIS, …) and choose the color palette most appropriate to your need. You can also proceed with the most common processes such as shadowing, aspect, slope, …
