dtm and dsm color information

i want to know about dsm and dtm color information. which color to identifying water, and crop, buildings like…

Normally, DSM and DTM files contain (2,5D) information where each pixel (raster) or each gridded point has an elevation value.

When visualizing the files in geospatial software, they assign continuous, gradient color shades to elevation.
As a habit, the highest would be red, then orange, yellow, green, blue, etc.
