I finished a project and outputted a DXF file with the default contour line spacing. Can I change the elevation interval and produce that DXF file without having to run the whole project all over again?

You can do that. Just select your new contour line settings as usual and go to:
If the DSM or DTM already exist, only the contour lines will be generated.
